Onions: Different Taste for Each Season

Onions can be divided into two categories: spring/summer fresh onions and fall/winter storage onions.


Spring/summer Fresh Onions
Spring/summer fresh onions are available in yellow, red and white throughout their season, March through August. Fresh onions can be identified by their thin, light-colored skin. Because they have higher water content, they are typically sweeter and milder than storage onions. This higher water content also makes them more susceptible to bruising.

With its delicate taste, the spring/summer onion is an ideal choice for salads and other fresh and lightly-cooked dishes.


Fall/winter Storage Onions
Fall/winter storage onions are available August through April. Also available in yellow, red and white, storage onions have multiple layers of thick, dark, papery skin. Storage onions have an intense flavor and a higher percentage of solids.

Storage onions are the best choice for savory dishes that require longer cooking times or more flavor.


The Color of Onions
Onions come in three colors - yellow, red, and white. Approximately 87 percent of the crop is devoted to yellow onion production, with about 8 percent red onions and 5 percent white onions.

Yellow onions are full-flavored and are a reliable standby for cooking almost anything. Yellow onions turn a rich, dark brown when cooked and give French Onion Soup its tangy sweet flavor. The red onion, with its wonderful color, is a good choice for fresh uses or in grilling and char-broiling. White onions are the traditional onion used in classic Mexican cuisine. They have a golden color and sweet flavor when sautéed.


Onion Sizes
Onions range in size from less than 1 inch in diameter (creamers/boilers) to more than 4.5 inches in diameter (super colossal). The most common sizes of onions sold in the United States are the medium (2 to 3 ¼ inches in diameter) and the jumbo (3 to 3 ¾ inches in diameter).

  • The more pungent onions exhibit strong anti-platelet activity. Platelet aggregation is associated with atherosclerosis, cardiovascular disease, heart attack and stroke.

4. University of Bern in Switzerland

  • Consumption of 1 g dry onion per day for 4 weeks increased bone mineral content in rats by more than 17% and mineral density by more than 13% compared to animals fed a control diet. This data suggests onion consumption has the potential to decrease the incidences of osteoporosis.

Practical Tips Using Onions as Home Remedies

Antioxidant-Rich Onions
To reap the most benefit from onions, choose varieties with the most antioxidants. Here they’re ranked from highest to lowest (we’ve included shallots, which are related to onions). If you don’t recognize some of the names, don’t worry. Just know that sweeter or milder-tasting onions have fewer antioxidants than their more pungent counterparts.

How To Store

Store onions in a cool, dry place, not in the fridge, and not near potatoes. Potatoes give off moisture and a gas that causes onions to spoil faster.

Cooks Tips

The more tears they cause, the more health benefits onions have. To stem the flood while you’re chopping, try chilling onions for about a half hour before cutting, and slice them from the top, leaving the root end intact; it has the strongest concentration of eye-burning compounds.

Be sure to wash onions well before chopping, especially if you’re going to eat them raw. Onions grow underground and can harbor nasty bacteria.

Like garlic, onions can be added to just about anything. Here are just a few suggestions.

  • Make fruit chutney with peaches, mangos, pears, apples, or apricots and plenty of chopped onion. Serve with meals as a condiment that won’t upset your blood sugar balance.
  • Roast some onions to serve as a savory side dish. Cut the root and top from a large onion. Place root side down on a foil-covered baking sheet and bake for about an hour at 400°F (200°C). When it’s done, remove it from the oven and make a deep crisscross cut in the top. Season with flavored vinegar, herbs, sea salt, coarse-ground pepper, and olive oil.
  • Enjoy French onion soup, but go easy on the bread and cheese topping. Try adding a few whole grain croutons instead.
  • Use caramelized onions to add wonderful flavor to any vegetable and pasta dish. To caramelize an onion, thinly slice onion, then heat 1 tablespoon olive oil in a heavy skillet over medium heat. Add onion and cook, covered, 10 minutes, stirring often. Remove cover and cook for 10 more minutes, stirring occasionally.


Perfect Portion: 1/4 cup
Onions have very few calories, so add them cooked or raw to as many dishes as you can think of. Minced raw onions offer the greatest health benefits.

Grilled Vegetables in Balsamic Tomato Sauce with CousCous

The sweetness of grilled vegetables is balanced by a tart tomato sauce, which mixes perfectly with simple couscous. Preferably use a heavy grill pan. If you don’t have one you can use a baking tray beneath an oven grill, or even roast the vegetables in a hot oven and then transfer them to a pan for the last part.

But you will get more of the char-grill flavor if you use a pan. If you want to make more or less couscous, just use the same quantity of water as couscous. This dish keeps well, as the flavor of the vegetables seems to grow stronger. It is just as nice served lightly warmed for lunch as hot for a dinner, or uses it as a cold dish in a selection of salads.

INGREDIENTS (Nutrition)

  • 1 tablespoon olive oil
  • 1 red bell pepper
  • 1 zucchini
  • 1 small eggplant
  • 1 large sweet onion
  • 3/4 cup frozen broad beans
  • 1 (14.5 ounce) can diced tomatoes
  • 2 tablespoons balsamic vinegar
  • 1 cup couscous
  • 1 cup vegetable stock

DIRECTIONS

  1. Remove the seeds from the pepper, and chop into strips about 1 to 2 inches long. Cut the eggplant crossways into rounds about 1/3 to 1/2 inch thick, and cut each one into 6 to 8 even chunks. Peel the onion, and chop into 8 portions. Trim the zucchini, and cut into thick slices.
  2. Heat grill pan over a high heat with a generous splash of olive oil. When it is very hot, add all the vegetables to the pan. Press down occasionally to get grill lines across them. Turn occasionally to prevent burning. Cook for about 15 minutes, or until the vegetables are evenly browned and cooked through.
  3. Stir broad beans into the vegetables. Add chopped tomatoes, and vinegar. Simmer for a few minutes while the couscous is prepared.
  4. Place couscous into a medium bowl. Add boiling vegetable stock, and stir with a fork. Keep lifting the couscous occasionally to prevent it sticking. It only takes 2 to 3 minutes to become soft. Place couscous in a large bowl or serving platter, and serve the vegetables on top.

Welcome to the second part of using onions in recipe. You may be wondering, why I put burger this time as the following recipe to optimize onions intake?

I believe burger can be healthy as long as we know how to replace the high calories ingredients with the lower ones. You can replace the ground beef with vegetarian meat, either you can buy them at the supermarket, or you can even make it yourself.

When there’s a will, there’s always a way to be healthy and keep the juicy meals for our appetite. As for cheese and sauce, try to find it with the non-cholesterol written statement from the producers and examine carefully for its ingredients. Perhaps, you can also find a special section in the supermarket for vegetarian and experiment with any replacement that will suite accordingly to your taste. Maybe you have other tips? Honestly the best burger you will ever eat, I promise! Big, juicy, quick and easy! Great with fries. This is my husband’s absolute favorite!

INGREDIENTS (Nutrition)

  • 2 pounds ground beef
  • 1 onion, chopped
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried basil
  • 1/4 cup Italian seasoned bread crumbs
  • 1 tablespoon grated Parmesan cheese
  • 1/3 cup teriyaki sauce
  • 6 slices American cheese
  • 6 onion rolls

DIRECTIONS

  1. Preheat oven to broil.
  2. In a large bowl, combine the ground beef, onion, salt, ground black pepper and basil; mix together well. Then add the bread crumbs, cheese and teriyaki sauce. Mix this together well and divide into 4 to 6 large, round balls.
  3. Place the hamburger balls onto a broiler pan, evenly spaced. Press down on each ball, either with your palm or with a spatula, until a perfectly round patty is formed.
  4. Broil for 8 minutes, turn each patty over, and broil for 8 minutes more. (Note: The outside of each patty should appear almost burnt.)
  5. Turn off heat and place cheese slices on each patty. When cheese is melted, remove from oven and serve on onion rolls.

I LOVE soup! This is one of my favorites. It has lots of vegetables and is full of flavor. I usually throw in some chopped cabbage. To make this a vegetarian recipe, use vegetable broth for the chicken broth.”

INGREDIENTS (Nutrition)

  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 teaspoons minced garlic
  • 2 tablespoons vegetable oil
  • 2 1/2 cups water
  • 2 tomatoes, diced
  • 1 (14.5 ounce) can peeled and diced tomatoes with juice
  • 1 (10.75 ounce) can chicken broth
  • 1/4 cup uncooked barley
  • 1/8 teaspoon ground black pepper

DIRECTIONS

  1. In a large saucepan over medium heat, combine the onions, celery, carrots, garlic and oil and saute for 5 to 10 minutes, or until all vegetables are almost tender.
  2. Then add the water, fresh tomatoes, canned tomatoes, chicken broth, barley and ground black pepper.
  3. Stir thoroughly and bring to a boil. Reduce heat to low and simmer for 35 to 40 minutes, or until barley is tender.

These powerful antioxidant compounds also help fight some of the side effects of high blood sugar, not to mention heart disease.
  • One study found that people who ate the most onions, along with other foods rich in flavonoids, had a 20 percent lower risk of heart disease. Thanks to their sulfur compounds which help prevent dangerous blood clots and lower high blood pressure. Since sulfur compounds are strongly anti-inflammatory, onions may also help relieve the pain and swelling of arthritis. Plus, onions even seem to boost HDL, the “good” cholesterol.
  • Onions are one of the richest food sources of chromium, a trace mineral that improves the body’s ability to respond to insulin.

Bear in your mind now, onions hold crucial part in your health as follows:
